<p>從2D進入4D五感境界，SEA TO SKY行政主廚William羅偉洲帶領的廚藝團隊以物理化學進程，運用食材本來特性翻轉演繹，引導美食進入「渾然忘我」的秘境。<br />
SEA TO SKY 為S&amp;W Taipei集團旗下品牌，<strong>主廚團隊以「漫步海洋星空」為題，展開海洋天際交錯的美食旅程。於今夏打造全新開放式廚房，首次推出「全台北最高</strong><strong>—</strong><strong>主廚餐桌預約制私人套餐」。</strong>延伸品牌海天一線的藍色意象，選用沁涼的水藍色系象徵海水波紋與潮汐浪花，木質調的沙色風格，如同在陽光、沙灘、椰影婆娑下漫步，紛呈溫馨柔和的LED光線設計，讓整體用餐氛圍更愜意溫暖，展現時尚而輕鬆的品牌調性。</p>

<p>早年從君悅飯店寶艾西餐廳就對William的廚藝驚鴻一瞥，他一直具有星星孵化器特質，在寶艾廳期間確實也獲得驗證，取得多年米其林餐盤肯定。主廚餐桌預約制私人套餐一直是他理想的當代料理風格。結合品牌故事，以「漫步在海洋星空」為題，從首道「海洋SEA」到最後「天空 SKY」，主廚團隊藉由內而外的五感料理敘事，融合各種頂級食材，帶領饕客以舌尖與味蕾領略高空海岸時空與食藝的旅行，恣意感受從海洋直達天際的旅途情境！潛入海洋，融合淺灣、岩岸、潮汐、大地等自然元素，賦予食材創新多變的風貌，結合旅途中所見的海岸意象與穿透生命力。主廚餐桌更以投影意境相互映襯，營造宛如置身於海底星空交錯的情境氛圍，展開一場海洋與天際交錯的五感味覺旅行。</p>
<p>SEA TO SKY主廚餐桌採預約制，僅8個座位（最多可容納10位），於每週三、週五、週六，晚餐時段19:00-21:30供應。預約制私人套餐共8道料理，套餐價格為每位6,000元+10%（需預付訂金）。</p>

<p><strong>蘊藏</strong> | 鮭魚、干貝、白甘</p>
<p>以瑰麗繽紛的擺盤展現海洋蘊藏無限可能的美麗風貌－鮭魚以番茄點綴，白魽柔嫩細緻，佐以紫蘇香氣及佛手瓜更為清香迷人；2L級生食干貝配上海葡萄及酒漬李子，果香酵素分解干貝鮮甜豐味。保留海鮮入口後的清爽餘韻，甘美鮮嫩。</p>
<p><strong>淺灣</strong> <strong>| </strong>海膽捲、山葵蛋黃醬</p>
<p>日本馬糞海膽及山藥包裹海苔後加以酥炸，日本哇沙米山葵的辛辣感及法式蛋黃醬溫和口感巧妙融合，並搭配海膽味噌醬汁平衡味蕾感受。海膽豐盛滋味於口中迸裂滿溢。</p>

<p><strong>潮汐</strong> <strong>|</strong> 慢火烤鴨湯、松葉蟹</p>
<p>中式料理結合法式澄清湯，將鴨骨爐烤後燉湯，鴨骨與蔬菜熬製2-3天後，以法式澄清湯手法呈現，鴨清湯的琥珀色澤與松葉蟹鮮美香氣無縫接軌，入口溫潤甘鮮。湯品中的迷你鴨肉餃子，以傳統義大利麵食義大利餃（Ravioli）為發想，內餡以法式油封鴨手法製成，另搭配手工丸子融會貫通中西廚藝。</p>
<p><strong>岩岸</strong> <strong>| </strong>伊比利火腿、皇家螯蝦、鮑魚</p>
<p>以義大利菜式為發想，香煎後帶出火腿鮮甜與法國螯蝦及鮑魚的鮮美香氣，口感馥郁飽滿而圓潤，口中油脂渾厚豐美，上方的筍片及橙皮帶出清香氣息。佐以鮑魚、干貝、蛤蠣燉煮而成的法式貝類醬，帶有南法傳統料理風味。</p>
<p><strong>旅途</strong> <strong>| </strong>日本和牛、稻香番薯、松露</p>
<p>行政總廚William羅偉洲獨家烹肉手法，選用美國蘋果木與日本熊本A5和牛肉質鮮嫩完美結合，油花分布均勻且入口即化，恰到好處的肉汁與細膩紋理，充分展現和牛豐腴美味。以地瓜泥製成的番薯，搭配松露奶油，外表包覆紫地瓜粉，搭配煙燻酸奶增添不同口感層次。上方以爆米花呈現稻穗形象，展現巧思，猶如漫步於旅途中可見的稻穗與土地。</p>
